If there’s one thing I don’t like about most snacks marketed as protein snacks, it’s the waste. It seems like the protein bar or bag of nuts or greek yogurt always comes in a plastic bag, wrapper, or plastic tub. Sure, they can sometimes be recycled, but how about avoiding the waste altogether AND being in control of what’s in my snack by making it myself? I posted this recipe in a list of other things on my blog over a year ago, but I’ve recently modified it to remove the sugar.
2 tbsp. butter (I use Earth Balance dairy-free soy-free spread)
2/3 cup peanut butter or reconstituted PB2 (affiliate link)
3 tbsp. honey
1 tsp. vanilla
1 1/2 cups puffed rice cereal (buy here – affiliate link)
1 cup quick oats
1/4 cup raisins or cranberries (I use both)
1/4 cup mini chocolate chips (could also be white chocolate or any other mini chips — I use Enjoy Life dairy-free soy-free – affiliate link)
Melt butter and mix all but fruit, bits and chopped peanuts. Let cool. Mix in fruit and bits. Refrigerate or freeze to chill dough into firmness. Form into balls about 1″. Store in airtight container.
